I think I'm actually going to miss Tucson

Yes it's true... I think I may actually miss Tucson. As much as I'm ready to be out of here and out of Arizona, the weekend I had with the Coelhos is giving me reason to miss Tucson. I always love hanging out with them!

Friday night Josh and I went to Gaslight Theater with his parents. It was sooo much fun! Let me tell you, if you haven't been to the Gaslight Theater you absolutely have to go. It's this cute lil' old fashioned western dinner theater. You sit around a wooden table and eat delicious popcorn and sundaes while watching a play. And everybody gets really into the show. The entire audience hisses and boos at the villains and cheers for the heroes. Plus... there is this cute 50s style diner right next door attached to the Gaslight.

Outside the diner next to the Gaslight

And, Josh surprised me and told them it was my birthday so they announced it after the show (he was one week early because apparently this is my birthday week celebration... so sweet!). And when it's your birthday at the Gaslight they give you a free ice cream cone and sing you Happy Birthday. What a wonderful night!

Chocolate Chip Pancakes

On Sunday morning Josh made breakfast... chocolate chip pancakes. It was his first time ever making pancakes and they were yummy! A couple of the pancakes were more chocolate than pancake but I was perfectly fine with that :). He also decided to make a couple of GIANT pancakes that took up the whole pan... those were pretty fun to watch being flipped. While he cooked, I got to watch, which was a lot like watching the food network, especially with his Emeril impersonations.

"Bam!"

(with inspiration from Emeril)

The smaller pancakes... the big one was the size of that pan.

Lindsay's Birthday

Josh has the most adorable nieces EVER! Seriously, Hannah and Lindsay are the cutest! And today was Lindsay's 5th birthday party. It was so much fun to hang out with all the little kids and swim, dance and make fun visors or "crowns" as Lindsay called them. But leave it to good ol' monsoon season to bring a ton of rain. It rained for pretty much the entire party, but we did get to swim for a little bit at the beginning.

Uncle Josh and Hannah

Explanation: Josh is wearing goggles that are about 5 sizes too small because apparently he is uber sensitive to those highly chlorinated community pools, so goggles are a must.. even if they are meant for little kids.

Uncle Blake and the Birthday Girl

Blake's "crown" said "Blake Rulez" (just in case you didn't know that already..haha) and Lindsay's said something like "SAYLIN", which was her attempt to spell her name.

The "crowns" were a hit (even with Josh's parents)

Lindsay had the coolest cake. It was a Spongebob themed cake and this is a picture of it.

It kinda reminded me of a cake that you'd see on Ace of Cakes. There were also about 3 other smaller cakes that were "crabby patties" (they looked just like little hamburger shaped cakes) to go with the Spongebob theme. When I was younger all I remember were the big sheet cakes and if you were really lucky you got an ice cream cake. Maybe this is the new cool... to have a cake in a neato shape with accompanying cakes that go with the theme. In another life (one in which I am blessed with the creative juices) I will be a cake maker. I think it would be so much fun to make cakes all day in fun different shapes with different themes. This reminds me that I got a cupcake book recently which has directions for how to decorate all kinds of cute cupcakes. So maybe I'll start small scale and work my way up, who knows.

Anyway, the party was a blast! What would be better than hanging out with little kids, doing crafts and listening to high school musical music? Not much. Paige (Josh's sister) did a great job of putting it all together. And, as a party favor we got a CD of Lindsay's favorite music. Yes, you guessed it, it's already in my car CD player and I most likely will be listening to it on the way home to California (gotta love High School Musical and Kidz Bop).
